Gluten free Chocolate Chip and Hazel Nut Cookies

These Gluten free Chocolate Chip and Hazel Nut Cookies are simply divine.

Ingredients for 30 Gluten free Chocolate Chip and Hazel Nut Cookies

360 g Butter

450 g of Sugar or less, I use around 360g

200g Hazel Nuts

600g of Gluten Free Flour

3 eggs

225g of Gluten Free Chocolate Chips

5g salt

I cap full of liquid vanilla

Dry roast the Hazel Nuts, or fry in a dry frying pan. Then bash them into roughly quarters

Melt the butter and sugar together, as I said above I use a lot less sugar as I find them very rich, and I prefer the taste rather than too much sweetness. Add the eggs and vanilla. Then mix in  with the flour, salt keep mixing and then add the nuts and chocolate chips.

Cover the mixture and pop in a cool pace, or in the fridge over night.

Heat the oven up to gas mark six, 180C.

Make balls of the mixture with your hands, it is quite stiff; round 64g each. Place on a baking tray, not a bad idea to cover the tray in baking paper. Flate each ball a bit with the palm of your hand. They take about 22 minutes of cooking, but keep your eye on them, when they get brown ring at bottom edges it is time to take them out. Ideally they should be crisp on top and still sft in the middle.
